Healthy Pizza: Cheese, Kale and Mushrooms
This is the most healthy pizza recipe I have ever made that left me speechless. If you have 30 minutes and room for 980 calories (for 2 persons), keep on reading you won’t be disappointed!
Healthy Pizza Tools & Ingredients:
Before starting, make sure you have all the necessary ingredients and tools:
- Mushrooms 113g
- Chopped Kale 113g
- Garlic 6g
- Baked Flatbreads 2pc
- Mozzarella Cheese 85g
- Feta Cheese 56g
- Cooking Oil, Salt, Pepper
- Dipping Sauce (Optional)
Important Note: The above ingredients are listed for 2 portions. You would also need the following tools:
- Medium Bowl
- Baking Sheet
- Measuring Spoons
- Silicone Brush
- Large non-stick pan
Step 1: Prepare Ingredients
Make sure you have all the ingredients available. Start with slicing the mushrooms and mince the garlic.
Step 2: Flatbreads
Place the flatbreads to a baking sheet and brush over 1 tbsp oil. Toast on the lower rack of the oven for about 3 minutes, until softened.
Step 3: Kale and Mushrooms
Use a large non-stick pan to heat 1 tbsp of oil over a medium-high. As the pan is hot add the mushrooms. Cook for 3-5 minutes until softened, don’t forget to stir occasionally. Add kale and half of garlic. Cook for 2 min, until kale is slightly wilted. S&P to taste.
Step 4: Bake time
Now we need to even layer all that delicious mozzarella cheese over the flatbread. Top with sauteed veggies and crumble fetta cheese over. Its time to bake, 6-8 minutes on the middle rack of the oven – until you get a golden flatbread and crispy kale.
Step 5: Serving time
Cut the flatbread into wedges and serve next to your favorite dipping sauce. We choose a ranch dipping sauce and it was a perfect match for our vegetarian pizza. Just take a look – how good it looks and tastes even better!
